2 pounds strawberries hulled and quartered
1 cup sugar
1/2 cup plus 2 Tablespoons of Ball real fruit instant pectin
3 Tablespoons fine chopped
ginger root
Pinch Maldon sea salt

Add the sugar and pectin to a non-metal bowl and whisk together. Put half the strawberries and half the ginger root in the bowl of a food processor. Pulse until the berries are finely chopped. Add the chopped berries to the bowl with the sugar. Repeat with the other half of the berries/ginger root. Add to the bowl with the first batch of berries.
Add the pinch of salt to the berries.

Stir to combine the berries and sugar. Let sit for one hour at room temperature. Put the bowl in the fridge for two hours. Spoon the fruit spread into smaller glass or plastic container – leaving about 3/4 inch space at the top. Store in refrigerator.
