Since March 9th is National Meatball Day – (I have a different recipe planned) but I had leftover walnut- onion stuffing from my mushrooms…. So I scooped them into meatballs, baked them and added them to my pasta! Toss together olive oil, roasted garlic cloves, chopped parsley and a few baked “meatballs” – the combination was soooooo good!!!
I also took a few mushrooms, sliced them thick – like 1/2 inch – drizzle with olive oil, roast at 400 until crispy – let cool on a cookie cooling rack – use a garnish for the pasta dish!
