Lupin nuggets 🌱
Lupini beans are highly nutritious, offering a generous amount of protein, fiber, and vitamins . Lupin beans are also low carb and an excellent alternative to animal protein.
200 g peeled and cooked Lupini Beans
50 g oat flour
1/2 tsp veggie broth powder
2 tbsp nutritional yeast
Pinch of nutmeg
1 or 2 tbsp olive oil
Place all ingredients in a food processor and process into a fine flour.
Divide the “Lupini mix “ into 10- 12 equal portions and shape each one into a nugget. Refrigerate for 1 hour .
You can fry them or bake them .
Serve with your favorite dipping sauce.
