Baked vegan broccoli cheese bites 🌱(Keto-friendly)
Easy low-carb snack for the whole family
400 g broccoli florets
2 tbsp ground flaxseeds
1 tbsp dried oregano
1/2 tsp onion powder
1/2 tsp garlic powder
100 g shredded cheese
3 tbsp nutritional yeast
Salt and pepper to taste
Preheat oven to 180c.
In a small bowl, mix ground flaxseed with 5 tbsp water and set aside.
Fill a large pot with water and 1 tbsp salt. Bring to a boil. Add broccoli florets to the water and blanch for 3 minutes.
Drain well and dry broccoli with paper towel, add all ingredients except cheese to a good processor and blitz until pieces are very finely chopped, add cheese and mix .
Scoop about 1 tbsp of the mixture into the palm of your hand.
Place on the baking sheet.
Bake in the oven for 20-25 minutes, until crispy and and golden brown.
